Friday catch-up...

I've just got a few things that I've been meaning to show you. Last weekend JP made the BEST beef short ribs I've ever had. He marinated them in grated ginger, garlic, soy sauce and Worcestershire sauce for about and hour, then grilled them. They were sooooooo delicious. We had them with a dish called Mofongo. It's made with fried green plantains, lots of garlic, pork cracklins and a little chicken broth. It's just all smushed together in a mortar and pestle, and I love it. It's a Puerto Rican dish that I fell in love with the first time we went to PR.


I've been working on peaches. I made my standard peach jam(below.) This year I tried a recipe from Ball Preserving for honey spiced peaches (I made the half recipe.) I'll let you know how they turned out this winter when I'm stirring some into my oatmeal but it looks like it will become a staple. How can it miss? Honey, cinnamon sticks, and peaches all swimming around together has to be good.

Well, other than those things it's just summer stuff as usual in the holler. We're going to have our first zucchini this weekend and waiting on the tomatoes to ripen. Everyone in the pack is doing well and we are blessed by God far more than we deserve. Have a great weekend, blessings from the holler...

YUMMY! I have been watching my peaches and went out the other day and found quite a few pits on the ground...ARGH! Not sure it it's the deer or what but I wrapped a chunk of netting around what I could reach of the tree, so frustrating:(

JP's ribs (well, not HIS ribs...) look yummy- I'll have to try his marinade. Can you buy the mofongo or do you have to make it? It sounds great!
And the peach preserves sound wonderful- I'll bring some biscuits over to test it for you if you like... *giggle*

The ribs and jam look delish. Can't wait to hear the verdict on your new peach recipe. So much to do with one crop after another coming out. I have got to get out and pick some red raspberries and blueberries are just starting, too. Glad the entire pack is well and happy!

In response to your comment on the back pain...yes, lumbar epidural is what I've had, 2 of them so far. I've heard it depends alot on the person as to how long the relief lasts, mine usually last a few months but you can get like 3 per year I think. I had one last fall before we traveled to Ft. Benning for son's BCT graduation and it helped alot, but I think I did more damage to my back since then, UGH, I never learn! Hope it helps if you decide to have it done;)

YUM! I'm starving! hehehe I love short ribs. That sounds easy to do also. But I can never cook them on the grill because they get burnt!
