Zucchini cakes...

This year I planted one zucchini plant and I've been really impressed with it's versatility. I've made bread, relish, muffins and these super easy and good cakes.

Zucchini Cakes
1 ½ cup shredded zucchini
1 egg
3 Tablespoons Bisquick
3 Tablespoons Parmesan cheese
2 tablespoons bacon bits
1 tsp. salt
pepper to your liking

Combine all ingredients and pan fry in olive oil until brown. Enjoy!

They look delicious! We don't have Bisquick here, but you have made me think about adapting other recipes to include zucchini and parmesan.

Yum! I had to click on the picture to enlarge it to see just how good they look. I think I may put some real bacon bits in them. Other than that, they look perfect!

According to Wikipedia, Bisquick is "a pre-mixed baking product sold by General Mills under their Betty Crocker brand, consisting of flour, shortening, salt, and baking powder (a leavening agent)."

Hi Mrs. JP! Sorry I haven't had much time for blogging lately. Hope to get back to it more now that the garden is gone and we're back from our trip. I see you've been very busy, too, with TP'd dogs and Grandbabygal and canning. I've printed out your recipe on the Zucchini cakes. Those look great - don't know if my guys will eat them if I tell em what's in it, but I sure will! Have a wonderful week!!!
